Captain Keith’s Favorite Florida Recipes |

Oyster Stew
2 Small Onions, Chopped 2 Tablespoons Butter 12 Ounces Fresh Raw Oysters, undrained 1 Quart Half & Half or Whole Milk 1/4 teaspoon Salt 1/4 teaspoon White Pepper
Sautee onion in butter until tender. Strain the oysters over a bowl to remove any grit or shells but reserve the oyster juice. Add oysters, strained juice and all other ingredients. Cook over low heat until edges of oysters begin to curl and mixture is hot, but not boiling. Stir often. Serve stew with crackers, or even better a fresh hot grilled cheese sandwich.

Crab Dip
1 Pound jumbo lump crabmeat, picked free of any broken shells 1 Cup grated pepper jack cheese (or just Monterey Jack) 3/4 Cup Mayonnaise 1/4 Cup Freshly grated Parmesan 1/4 Cup Minced Green Onions 5-6 Cloves roasted garlic or 2 cloves minced garlic 3 Tablespoons Worcestershire sauce 2 Tablespoons fresh lemon or lime juice Salt & Pepper to taste
Preheat the oven to 325 degrees. Combine all the ingredients in a casserole and gently stir until thoroughly mixed. Bake for 40 minutes. Serve hot with crackers or toast.

Captain Keith’s Famous Cheese Grits
2 Cups water 1/2 Cup Quick cooking grits 1/2 teaspoon garlic powder 2/3 Cup shredded cheese of your preference 2 Tablespoons Butter
In saucepan, bring water to a boil. Slowly stir grits into boiling water, reduce heat to low and cover. Cook 5 to 7 minutes or until thickened. Add shredded cheese and garlic, and gently mix together. Serves four. Top with 1/2 tablespoon butter. |

Key Lime Pie
One 14 Ounce can sweetened condensed milk 1/2 Cup Key lime juice 1 teaspoon grated lime zest 3 egg yolks One 8-inch prebaked pie crust or graham cracker crust 1 Cup Heavy Whipping Cream 2 Tablespoons fine Sugar
Preheat the oven to 325 degrees. In a medium bowl, combine the milk, lime juice, and zest; blend in the egg yolks. Pour filing into the crust. Bake for 12-15 minutes, or until the filling is set. While the pie is in the oven, beat the cold heavy whipping cream in a refrigerated bowl until the cream has nearly doubled and clings to the beaters when raised. While whipping the cream, gradually add the sugar, a little at a time. After the pie has cooled, drop a heaping tablespoon or two on each serving! |

- On the Space Coast, snook targeting schools of finger mullet around jetties at mouth of Port Canaveral, taking Rapala's X-Rap Subwalk on incoming tides when's it's calm, reports Capt. Keith Mixon of Lakeland (www.mixinworkwithplay.com). Variety of gamefish chasing bait around Port, jetties and beaches. Flounder up to 15 inches on sandy bottoms next to drop-offs, going for Bass Assassin's Good Penny 4-inch BLURP Sea Shad worked slowly near mouth of port. Jacks up to 10 pounds also cruising Port, crashing topwater plugs and jerkbaits under popping corks. On beaches, redfish 16-23 inches on sand bars around schools of bait and going for live or fresh dead mullet on bottom at low tide. |

- On the Space Coast, slot-sized redfish south of S.R. 520 near Thousand Islands, preferring scented jerkbaits and 1/4-ounce gold Nemire Spin Rippers over the grass, reports Capt. Keith Mixon of Lakeland (www.mixinworkwithplay.com). Some anglers wading for reds in 2-3 feet. Good week for trout along western shores of Banana River in "No Motor Zone,'' with fish up to 20 inches taking live shrimp and mullet on circle hooks at first light in 3-4 feet where baitfish present. Mangrove snapper up to 15 inches aggressive at Port Canaveral, going for live shrimp around docks and structure. Mangroves best on outgoing tides early mornings. |

At Banana River/Mosquito Lagoon, early-morning and late-evening fishing has paid off when targeting schools of redfish with live bait like mullet and shrimp in the southern region of Mosquito Lagoon. Artificial lures such as MirrOlure's MirrOminnow have worked well in less than two feet of water. Fresh chunks of cut mullet and ladyfish as well as blue crabs have been used throughout the Haulover Canal for large bull reds up to 40 inches.Around Port Canaveral, mangrove snapper have been feeding aggressively on live shrimp during the early morning hours. Many snook have also been feeding on live mullet near the jetties and along the beach near schools of bait fish, reports Capt. - On the Space Coast, slot redfish up to 25 inches taking pinfish or mullet rigged with circle hooks under popping corks in Indian River south of Titusville, reports Capt. Keith Mixon of Lakeland (www.mixinworkwithplay.com). On calmer days, reds spotted working flats in 2-3 feet along western shoreline around State Road 405. Undersized snook going for topwater plugs worked slowly in just 12 inches of water throughout Indian River. Flounder up to 16 inches picking up fresh dead finger mullet on 1/4-ounce jig-heads inside Port Canaveral off sandy bottoms near channel drop-offs. Hunt for Reds in October Tournament is Oct. 10-11 in Titusville, and kids under 15 can fish it free (www.huntforreds.com). |
