Captain Keith’s Favorite Florida Recipes

Oyster Stew

 

2 Small Onions, Chopped

2 Tablespoons Butter

12 Ounces Fresh Raw Oysters, undrained

1 Quart Half & Half or Whole Milk

1/4 teaspoon Salt

1/4 teaspoon White Pepper

 

Sautee onion in butter until tender.  Strain the oysters over a bowl to remove any grit or shells but reserve the oyster juice.  Add oysters, strained juice and all other ingredients.  Cook over low heat until edges of oysters begin to curl and mixture is hot, but not boiling.  Stir often.  Serve stew with crackers, or even better a fresh hot grilled cheese sandwich.

Crab Dip

 

1 Pound jumbo lump crabmeat, picked free of any broken shells

1 Cup grated pepper jack cheese (or just Monterey Jack)

3/4 Cup Mayonnaise

1/4 Cup Freshly grated Parmesan

1/4 Cup Minced Green Onions

5-6 Cloves roasted garlic or 2 cloves minced garlic

3 Tablespoons Worcestershire sauce

2 Tablespoons fresh lemon or lime juice

Salt & Pepper to taste

 

Preheat the oven to 325 degrees.  Combine all the ingredients in a casserole and gently stir until thoroughly mixed.  Bake for 40 minutes.  Serve hot with crackers or toast.

Captain Keith’s Famous Cheese Grits

 

2 Cups water

1/2 Cup Quick cooking grits

1/2 teaspoon garlic powder

2/3 Cup shredded cheese of your preference

2 Tablespoons Butter

 

In saucepan, bring water to a boil.  Slowly stir grits into boiling water, reduce heat to low and cover.  Cook 5 to 7 minutes or until thickened.  Add shredded cheese and garlic, and gently mix together.  Serves four.  Top with 1/2 tablespoon butter.

Desserts!

Key Lime Pie

 

One 14 Ounce can sweetened condensed milk

1/2 Cup Key lime juice

1 teaspoon grated lime zest

3 egg yolks

One 8-inch prebaked pie crust or graham cracker crust

1 Cup Heavy Whipping Cream

2 Tablespoons fine Sugar

 

Preheat the oven to 325 degrees.  In a medium bowl, combine the milk, lime juice, and zest; blend in the egg yolks.  Pour filing into the crust.  Bake for 12-15 minutes, or until the filling is set.  While the pie is in the oven, beat the cold heavy whipping cream in a refrigerated bowl until the cream has nearly doubled and clings to the beaters when raised.  While whipping the cream, gradually add the sugar, a little at a time.   After the pie has cooled, drop a heaping tablespoon or two on each serving!

- Slot-sized snook "very active'' on Space Coast at Port Canaveral, reports Capt. Keith Mixon of Lakeland (www.mixinworkwithplay.com). Mixon said snook eating live large shrimp and jerkbaits near structure or around jetties. Redfish and trout taking live pinfish or cut mullet and ladyfish over drop-offs. Mixon said Parrish Park ramp remains closed.

Fishing Report—Aug 28, 2008

- Flounder 18-20 inches "very good'' around Port Canaveral, reports Capt. Keith Mixon of Lakeland (www.mixinworkwithplay.com). Jerkbaits and freshly dead finger mullet on sandy bottoms and near channel markers producing flounder. Early bite for trout on topwater (Storm Rattlin' Chug Bug) on flats in Banana River. When sun comes up, Mixon switching to jerkbaits around mullet schools.

- Mangrove snapper aggressive at Port Canaveral around docks and structure on outgoing tides with live shrimp and Bass Assassin 4-inch Sea Shads in Electric Chicken color, reports Capt. Keith Mixon of Lakeland (www.mixinworkwithplay.com). Trout most consistent bite on flats in Banana River, with plenty of 2- and 3-pounders on deep edges and drop-offs from first light to mid-morning on surface lures, jerkbaits and gold spoons.

Mixin’ Work with Play Fishing Charters

Capt. Keith Mixon of Lakeland was releasing snook up to 40 inches at Mosquito Lagoon and Haulover Canal this week.  Snook season resumes after being closed since May 1 on the Gulf Coast and June 1 on the Atlantic coast. Slot limits are 28 to 33 inches on the Gulf Coast, and 28 to 32 inches on the Atlantic coast. The daily limit is one per person on both coasts.
